Ginger Sweet Potatoes

Serves 6
¼ cup Christian Brothers Brandy
3 cans of sweet potatoes
1 stick butter
½ cup heavy cream
2 tablespoons ground ginger
salt and white pepper to taste

In a large saucepan, over medium high heat, bring sweet potatoes to a boil and drain. Add butter, cream, Brandy and ginger to sweet potatoes and whip to blend. Season with salt and pepper to taste.
