Five-Spice Apple Chutney
Serves 6
¼ cup Christian Brothers Brandy
½ stick butter
4 large granny smith apples, peeled, cored and diced
1 medium red onion
3 tablespoons brown sugar
2 tablespoons Chinese 5 Spice Powder
In a large sauté pan, over medium heat, melt butter. Add apples and onions and cook until tender. Add brown sugar and 5-spice powder. Stir gently to blend. Deglaze* with Brandy. Cook for 5 minutes to reduce liquid.
* To deglaze, pour the Brandy into the pan, heat, and stir to loosen the browned ingredients off the bottom of the pan.
